Bruschetta and Roasted Red Pepper Recipies

These are two recipies I've created and love to use both at home, and at work. Please feel free to use them yourself if you like.

Bruschetta

In a large mixing bowl mix together the following ingredients:
5 cups small diced tomatoes
11/2 cups fine diced red onions
2 tsp minced/pureed garlic
1/4 cup extra virgin olive oil
1/8 cup balsamic vinegar
about 10 basil leaves

After mixing the above ingredients chill and serve.



Roasted Red Peppers

For this easy and delicious recipe you'll need:
medium red peppers
1 tbsp extra virgin olive oil for every pepper used.
Preheat standard oven to 300 degrees farenheit
place peppers covered in oil on a flat baking sheet and bake at 300 degrees for 50 minutes or until a nice brow skin starts to develop on the outside, and the peppers become soft. After baking is done cover pan with Saran Wrap and allow peppers to sweat for 10 minutes (this allows the skin to begin peeling off the flesh of the pepper). After allowing to sweat peal the skin, it should just come right off, then pull the core out of the pepper using the top stem of the pepper, and if need be slice your peppers. These peppers are great as a vegetable option on and meal, in soups, pizzas, you name it it'll be great.
