While it took until 915pm (an extra hour to cook) it turned out to be an absolutely amazing crock pot risotto dish. I highly recommend drizzling balsamic vinegar on top, and if you're looking for a little more kick to it add some hot sauce as well.
This was a very full and filling vegetarian dish and I highly recommend making it.
